Banana Bread

This is the recipe from my childhood! Minimal amounts of added sugar, and the most common baking staples without a bunch of random ingredients. It can also be put into a muffin tin to reduce the baking time.


  • ¼ cup butter or olive oil
  • ½ cup brown sugar
  • 1 egg
  • 1 cup oats
  • 1 ½ cup mashed banana (approx 4 ripe bananas)
  • 1 teaspoon vanilla
  • 1 ½ cups flour
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda


  • ½ cups chopped
  • ½ cup chocolate chips
  • 1 tablespoon ground cinnamon

Mix all the wet ingredients

In a mixer, beat the bananas until mashed. Add in the rest of the wet ingredients and mix. Add dry ingredients to the bowl and mix well, adding in the optional good stuff, but I HIGHLY recommend adding cinnamon.


Grease and flour a loaf pan, baking at 350 deg for 1 hour.

For muffins, grease tins and fill each cup ½ way full. Bake at 350 deg for 12-15 minutes.
