Lemon Pepper Asparagus

A true pairing of flavors, lemons and asparagus just seems to be made for each other! Serve this as a side, add shrimp to the cooking process for a light meal, and for a complete meal add rice.

Serves 3 {Each Serving: Cals 70, Protein: 3, Carbs: 5, Fat: 4}


  • 1 Lb asparagus
  • 1 Tablespoon Olive oil
  • 1 lemon, zested and juiced
  • Pinch of sea salt
  • Freshly cracked pepper


  • Shrimp
  • Fresh Thyme


Trim the woody ends off the asparagus. Place on a baking sheet and add the olive oil, lemon juice, fresh cracked pepper and sea salt on top. Roast in oven for 8-12 minutes at 400 degrees, or until tips turn slightly brown. Top with lemon zest when completed cooking.

With Shrimp:

Simply add the shrimp to the whole process. It is finished cooking when the shrimp is completely opaque and pink.
