What to do with Zoodles (Zucchini Noodles)?? Make a healthier, low-carb and gluten free zoodle pasta salad! So incredibly tasty AND filling, this will be a summer go-to in your house, guaranteed.
- Mini peppers cut into rings
- Marinated artichoke hearts
- Chopped cucumber
- 1 can drained beans (I prefer garbanzo or Cannellini)
- Sliced olives
- Sliced tomatoes
- Fine cut lettuce (Butter lettuce or arugula would be tasty)
- Green onion, red onions, or even mint!
- Feta Cheese & Pine Nuts (optional)
- Dressing - a little drizzle of olive oil and balsamic.
Just mix all together in a bowl and toss with equal parts olive oil and balsamic. You can literally add extra veggies or omit any of these ingredients according to what you have on hand!
